Johnson’s Processing Plant is a small, family-run butcher shop in Chadwick, Illinois.
They’ve been doing this a long time, and it shows in how they run things: every order comes back exactly to spec, USDA-compliant, cut and wrapped the same careful way whether it’s a quarter cow or a whole hog. We don’t have to check on that part anymore. It’s just how they work.

Johnson’s handles beef, pork, and lamb, all custom cut rather than run through a standard cut sheet. They work directly with the same local farmers for both cattle and hog processing, which is probably why they’re easy to work with, they understand the farmer’s side of this as well as the customer’s.
